Gloria's Easter Ricotta Pie

For 1 pie.
Filling
Ingredients
- 2 cups milk
- 3 eggs
- 1 teaspoon vanilla
- 1 cup sugar
- 6 tablespoon cornstarch
- 1/2 teaspoon each - grated lemon and orange peel lemon extract, orange extract
Method
Mix and cook until thickened, stirring constantly. Really stir - this burns easily
Remove from heat and cool.
Filling - part 2
Ingredients
- 2 lb ricotta
- 3 eggs
- 3/4 cup sugar
Method
Beat well. Add custard and beat some more.
Crust (makes 1 bottom and 1 lattice top)
Ingredients
- 2 cups flour
- 4 teaspoons Baking Powder
- 2 eggs
- 4 teaspoon sugar
- 6 tablespoons butter
Method
Mix as any pie crust. Works well in the food processor.
Roll half the dough and place in pie pan. Pour in filling. Use the remaining dough for a lattice top.
Bake at 350 for 1 hour. Turn off oven and leave in oven to cool.
